Although most of our vineyards are in Serralunga, the Riesling vineyards are about 30 miles (50 km) further south, in the village of Ciglié in the alta langa region, on the southernermost hill of the Dolcetto di Dogliani area. The soil here is rich inlimestone, as is the soil in Serralunga, but with an underlying layer of “pietra di langa” stone that helps the vine to develop mineral characteristics. The altitude and the cooler climate in Ciglié help to develop freshnessand complex aromasthe grapes are hand-picked into small boxes, then pressed lightl.
The cool fermentation (60°F- 15°C) take place in stainless steel and lasts about 40 days; the wine is the cooled to discourage malolacticfermantation, and aged on the lees for about six months in stainless steet tanks (withoutbatonnage), and is bottled in May. Residual sweetness remains about 5-6 g/l due to the low temperatures of the fermatation, this slight residual adding to the varietal expression of Riesling.
Tasting Note: in the glass the wine is straw yellow with greenish glints. The aroma is fruity, slightly tropical whe young, and evolves into complex herbal and mineral notes due to the adidity. In the mouth the entry is full. Savory. And rich with fruit; the finish is fresh and persistent. Accompaniments: well with raw fish preparations and seafood antipasti in general.
