The vinification takes place through a soft pressing whole grapes , harvested in boxes , with a slow and lengthy process , in order to extract the color enough to have the slight pink color.

 

The fermentation of the base wine is made of 80% in stainless steel tanks and 20% in barrels of 700 liter French oak . To early May assembles the base wine , and you make the draw for the second fermentation in the bottle. The permanence in bottle on the lees lasts about 18 months , and after disgorgement , two months and marketing .

 

Tasting the wine shows a fine bead , soft pink color, but brilliant. Explosive nose of fruit and red and white flowers , with a slight tinge of yeast . In the mouth the full membership , dominated by a long, lingering freshness and austerity of the typical light tannins of Nebbiolo grape variety , but ends with a sweetness that long stays in the back – aroma.
